The consistency of the Clare climate usually produces a good Cabernet Sauvignon. 2016 with a wet winter and mild summer takes the variety to a new level.
Aged for 20 months in French Oak.
Colour – Deep purple black.
Aroma – Intense mixed forest fruits and cedar from the French Oak.
Palate – An intensity of cassis fruit only a great vintage can produce.
The smoothness of this Cabernet to drink comes from the lighter crushing giving softer, finer fruit tannins – yum!
Drink with the richest casseroles or aged cheddar cheese.
